You should be able to modify the server if your application is on a different one (e.g. standard is my.geotab.com but you could change it to mypreview.geotab.com if your server is hosted there, or any other if you're on a different one).

I'll let someone else chime in here about the "apn" part of your question. (@TuckerBA-1087​?)

Are you trying to get the GO device to skip sending data to the Geotab platform completely and instead send it to your own platform, or are you trying to feed the data from MyGeotab to your own platform? I'm pretty sure you can't do the first thing, but the 2nd depends on how you're trying to do the data feed. I can help you with that, I just need more information about the feed you're trying to create.
